Project: "Measuring Color Properties of Fermented Foods”

The College of Arts and Sciences Student and Faculty Excellence (SAFE) provided Dr. Carneiro with funding to purchase equipment and supplies to measure the color properties of fermented foods and beverages. Following training, the materials will be used for both research and teaching purposes. Carneiro’s research interests include the application of flavor chemistry, sensory evaluation, and consumer studies to guide sustainable production of innovative, appealing, and high-quality products with economic benefit for local food and beverage industries.

Using the equipment and supplies, students enrolled in FER 1000: Principles of Fermentation Sciences will be able to observe microbial growth during the yeast fermentation lab, as it tends to lead to color changes in the products and solutions. In more advanced courses, students will be able to correlate color properties of the products with consumer acceptability, for example. The equipment is a valuable tool to assess the quality of fermented food products and may be used in future shelf life studies as well.
